There are over 65 countries known for coffee production worldwide. Amongst these countries, Ethiopia stands out as one of the countries where a large variety of coffee beans can be found. While there remains a wide possibility of developing more coffee with different blend and brew, it should also be noted that the quality of coffee ultimately depends on the type of beans, the soil, and other climatic conditions in the region where the beans are cultivated.

In this article, we will be discussing the unique features of two common and high-quality beans used in the production of coffee. They are the Arabica beans and the Robusta beans. Making a choice from the brew made with either of these beans is easy because their characteristics are different, for example, the Arabica beans are characteristically milder, it has a stronger aroma due to the high quality rounded pallet which gives off mild flavors. The Robusta beans, on the other hand, have a stronger taste, and it contains more caffeine. The farmers have pointed out that they tend to use Robusta beans in the production of coffee more often because it is easier to grow and harvest. Hence the coffee produced is cheaper. Robusta is cultivated on farms with flat topography and at low altitudes which makes it less labor intensive to produce. Farmers, however, expect more profits when they cultivate the Robusta beans because the plant has been discovered to be more resistant to crop diseases and insects (due to the high concentration of caffeine which repels insects). Obviously, healthy crops will produce a higher amount of coffee.

The Arabica coffee plants are grown at a high altitude of about 600 meters because they need to be grown in shades high up the mountains. Hence, it is quite tasking to cultivate and harvest the Arabica coffee plants. However, the best coffee in the world is produced from Arabica beans which make it imperative that the farmers find ways to overcome the difficulties in cultivating and harvesting the Arabica coffee beans. It should also be noted that there has been some substandard Arabica coffee bean discovered in the market. This means, even though the brand indicates the coffee beans are Arabica, the product might not give the high-quality taste attributed to coffee made from Arabica beans. Pricing may be a good way to tell the difference in quality.

A cup of Turkish coffee may last 40 of memory and remembrance?

I have not come across another drink as life-saving as Turkish coffee. When you drink it with your friends, you reminisce the past; the conversation gets deeper; you tell the fortune for the curious one; and also it can be used to measure the patience of the groom by adding a bit of salt in the coffee. It appears that Turkish coffee which continues its journey from the past to the future makes the drinkers addicted, thus it leaves a memory that lingers on for 40 years.

Where did the 40 years of memory originate from?

Once upon a time there was a wise man from Üsküdar in Istanbul. All sorts of people would visit this coffee maker to get his advice, to listen to his chatting and share their troubles.

This wise man’s real job was not to make coffee but to sell coffee and his coffee was known for its bitterness. One day, a janissary soldier entered this coffee shop. There were people who liked drinking this bitter coffee inside as usual. But one of them was a Greek smoking hookah. Just then the janissary coming inside said:

-That wise man with skilled hands, a wealth heart and a broad mind! Make coffee for all of the customers and serve them on me; but except that heathen.

The Greek he called a heathen was the captain of a ship. The Greek customer who heard these words sighed deeply and continued smoking his hookah in darkness.

The wise man owning the coffee house made coffee for everyone and then made two cups of coffee for the Captain and himself and approached the Captain. The janissary who saw this got annoyed and said, 'Did I not say everyone except him?' Then the wise man said, "This is not yours but my treat.”

The wise man and the Greek Captain had chatted for a long time. The Greek Captain enjoyed this conversation so much that when he returned to his home he noted down what he had experienced there.

40 years passed by. The Greeks was selling their prisoners on the market and financed their rebellions. Many Ottoman soldiers were bought to be killed. An old man who quoted a good price for the wise man bought the wise man. He took him away from the market place to a deserted place. The Greek Captain remembered the Coffee Maker, but the Coffee Maker had already forgotten the Greek Captain, and so his fear continued.

"O’ wise man, the coffee you served me has created a friendship between us, which extended to this day. I have not forgotten the memory of that coffee, even if you had. Now you are free; but if you wish, I could safely take you to your country," said the Greek Captain.

So this is how the saying of “the 40 years of memory” originated. Nowadays, the saying "coffee is an excuse, what matters is the chatting" which is said about the chatting over coffee supports this story. There is also an endless benefit to the Turkish coffee which is beautiful in itself and in its chatting.

How to make Turkish Coffee?

Greetings, coffee lovers! I’m sure many of you love experimenting with new tastes, so here’s a question for you: have you ever tried a real, professionally made, delicious Turkish coffee? Here, I will show you how to make one of the oldest, strongest and richest coffee recipes in the world so you can fall in love with it like I did.

Before we start, there are some things I want to share with you. There are a number of different ways to prepare truly great and delicious Turkish coffee and this is just one of them. Whichever way you choose, it’s absolutely essential to use freshly roasted Turkish coffee that is extremely fine, like powder, for the richest and freshest taste possible. Did you know that most coffees lose a great part of their freshness and taste after the first 30 days since they have been ground? This is why I strongly suggest that you buy your own freshly roasted beans and grind them yourself, or buy only a few days old, fresh grind for the richest taste and maximum quality.

And now, let’s see what you’ll need to make Turkish coffee. You need filtered or bottled water, some freshly roasted and ground Turkish coffee, a special wide-bottomed coffee pot, usually made of copper, called cezve, Turkish coffee cups, and if you like your coffee sweet, some sugar. Remember that because of its roasting technique, Turkish coffee is naturally sweater. It’s usually served without sugar, but with a small piece of Turkish delight instead.

We’re ready to start! First, fill the coffee pot with water – one Turkish coffee cup per person. Since I’m making coffee for two, I will add two cups of water. If everyone takes Turkish coffee with sugar, add a total of four Turkish teaspoons of sugar right away, two teaspoons per person, and don’t stir. Next, add coffee, again without stirring. My standard measure is around one heaped teaspoon per cup, and since I’m making coffee for two, I will add two teaspoons. Depending on your taste, you can add more or less coffee at this stage. Finally, place the cezve on the stove on low heat. As it starts to heat up, stir it slowly to allow sugar to caramelise for the best taste and let it come to a boil.

When the coffee starts to boil, foam will start to form on the surface. Let it rise and remove the pot from the stove before it overflows, and then place a bit of that foam slowly into each coffee cup. The more foam in the cups, the better the coffee tastes and looks. Place the pot back on the stove, let the foam rise again, and then slowly and gently pour coffee into each cup to preserve the foam. Serve Turkish coffee with a glass of water and, if you want to make it even more delicious, some Turkish delight.

The Turkish coffee has a long history which not only tells of its unique tastes and high quality as a coffee blend but the methods of telling the fortune of the person who drank the coffee in the cup. It is an old custom that has ‘mystified’ the Turkish coffee over the years making it one of the most sought-after global coffee brands.

Who can tell your future?

Anyone can tell fortune from the coffee cup, but it must be someone who did not drink from the cup. The tradition has been passed down over the years, and many Turkish people know how the process. You can also have your fortune told from a cup of Turkish coffee by a professional.

How’s it done?

It is quite an intriguing process. You will need to enjoy your cup of Turkish coffee drinking from one side of the cup till it is finished. Place a saucer on the finished coffee cup and make a wish. The cup will then be raised to the chest level and turned anti-clockwise a few times. Turn the cup upside down on the saucer and leave it to cool. It is believed that placing a coin on the coffee cup turned upside down will remove any bad signs that maybe be foretold. When the cup has cooled down, the reader lifts the cup and starts telling the future of the person who drank the coffee from the patterns formed in the coffee cup and on the saucer.

Telling fortune from coffee cups has become very popular. It is said that both the past and future can be told from reading a coffee cup. The process of divination involves regarding the coffee as to horizontal halves. The shapes formed in the lower half are regarded as the past, and the shapes formed in the upper half represent the future. On the right side, positive readings are done while the patterns on the left side of the cup are regarded as negative which could be indications of attacks, health issues, financial problems, etc. it is also known that the fortune teller can only see forty days into the future while reading a cup of coffee. There is also the issue of a “prophet’s fortune telling” where the reader finds it difficult to separate the coffee cup from the saucer. If this happens, it is said that the person who drank from the coffee cup has a bright future hence there is no need to tell their future. In another situation, while lifting the coffee cup off the saucer, if large pieces of ground coffee beans fall off the cup onto the saucer, it is said that the person who drank from the cup will soon get relief from their problems. However, if coffee is noticed to be dripping onto the saucer as it is being lifted, the person who drank from the cup is told that they may soon undergo experiences that will make them shed tears.

The shapes formed on the saucer while the coffee cup was upturned are also interpreted. These shapes are regarded as a representation of the situation in the person’s home. If the coffee residue hasn’t touched major parts of the saucer, it is said that there will be relief in the person’s home. However, signs of an irregular confused pattern is usually interpreted as the tendency that there will be a funeral or illness related issues in their home. The coffee reading session is ended by flipping the saucer once, and if a drop of coffee rolls beyond the radius of the saucer, it is interpreted as the persons wish will come true. In addition, during fortune telling by reading coffee cups, the reader should not reveal information that will give the person unrealistic hopes or bad news that can cause sadness.

I have visited Turkey before, and I was so impressed with the coffee they serve in that country. The restaurants and local shops had the best coffee brew, so when I found this Turkish coffee brand in the United States, I was excited. I couldn’t wait to try it but unfortunately, it was my first time, and the result was not so good. I checked YouTube to find some videos about making coffee using the Turkish methods, and I found what I was looking for, after writing the methods, I followed the procedure carefully, and the result was amazing. I knew I hadn't made a mistake; it turned out to be even better than the coffee I was served during the few days I spent in Turkey.
